Hidden treasure in form of a bakery

Tired of always ending up at the same pastry spots? That used to be my problem until I discovered Koppo, an artisanal bakery in the San Jorge neighborhood. They have a history of more than 40 years of baking pastries, bread, and chocolates by hand, and that experience and devotion show off once you try their goods.
I try different pastries every time I go by, but most of the food I’ve tried is cake and chocolate truffles.
I’ve eaten Koppo’s cakes at many birthday parties and also tried some slices in their shop, all with different cake flavours and various fillings. However, every single bite of each of them had the perfect combination of fluffy sponge cake and the pop of flavour of its filling.
Specifically, Koppo’s red velvet cake is the closest I’ve been to meeting the perfect cake. The red sponge cake is airy, moist, and soft. It dissolves in your mouth. It’s not excessively sweet, so, as someone who prefers savory food over sweet dishes, it’s amazing. And then, the filling... Talk about a flawless execution. It’s a cream cheese filling that’s savory without being distracting. And the combination of both is heaven on earth; just the perfect blend of salty and sweet.
Also, if you are a chocolate lover like I am, Koppo’s chocolate truffles are the best truffles I’ve tried in Pamplona. They have 10 different flavours to try, and each of them is amazing: extra-bitter, milk, cream, champagne, whisky, cognac, coffee, orange, cinnamon, and crocanti.
My favourites are the orange and the extra-bitter truffles. I love the orange and chocolate blend, and prefer bitter chocolate over any other type. Nevertheless, each and every truffle is soft, creamy, and gooey in the best way. And its covering helps picking them up, distinguishing them, and adds different flavours or textures to the truffles.
Independently of what pastry you try, Koppo delivers it in the best way possible. The care they have for their products and the hand labour shows in how good their pastries are. It might not be near the city centre or the universities, but everyone interested in a good-quality bakery should give it a try.
